Guilt – Free Peppermint Brownies

I don’t know about you, but I love brownies!!! In my family, mainly me and my brother, we are out to create over the top brownies. I will say this, but don’t tell him he is a brownie master!! He has created some brownies that will make you want to eat the whole pan!! Not even!!

So when I saw these brownies I was like I’m on it. Here we go !

Ingredients :

• 1-15 0z low sodium Black Beans

• 1/3 cup coconut oil

• 1/4 cup unsweetened cocoa powder

• 1/8 teaspoon of salt

•  2 teaspoons of vanilla

• 1/2 cup of honey

• 3 eggs

• 2 drops of  Peppermint Vitality essential oil

Directions :

1.Preheat oven 350 degrees

2. Rinse black beans

3. Melt coconut oil

4. Blend all ingredients except eggs in food processor until smooth

5. In a separate  bowl whisk eggs together

6. Fold into chocolate mixture

7. Pour into a 8 by 8 greased pan and bake 25 to 30 minutes

8. Let cool for 15 minutes

cut and serve…enjoy them without the guilt!!

Here are mine!!

They are moist, light, and have a hint of mint from the peppermint oil , we have a winner!

Even husband approved!! That says a lot as he loves his chocolate!

NingXia Wolfberry Chicken Salad

In my family we love chicken salad. We are always trying to bring it up to a new level. I think its a competition between us. My daughter makes a mean one!

Today I am going to add dried Organic NingXia Wolfberries and Vitality Black Pepper Essential Oil

For my recipe :

Today I used 2 big cans of chicken breast  13 oz. each. ( I have used rotisserie chicken and left over grilled chicken ).

Half of an onion

Chopped up 1/4 cup of Organic NingXia Wolfberries

2 drops of Vitality Black Pepper Essential Oil

4 boiled eggs

Shredded carrot ,I used about 1/4 to 1/2 cup

1/4 teaspoon of salt

Mixed mayo and brown spicy mustard together and mixed in my chicken.

NingXia Wolfberries make a great and healthy snack

As for my new improved chicken salad,try it on toasted bread or have with crackers.

Butternut Squash Ravioli

I am a big fan of butternut squash. During the winter months I have butternut squash soup made up and in the freezer. Today I wanted to try my hand at making homemade ravioli. I love pasta, but have never attempted it.

I used a few herbs from the garden, like sage, but also used my Young Living Essential Vitality™  Oils.

Here is the recipe I used :

1 butternut squash

I peeled and removed the seeds. Cut it into small cubes then place them on a cookie sheet. Then toss them with few tablespoons of olive oil, and add salt and pepper.

Bake at 375 degrees for about 30 to 40 minutes or until they are fork tender. My squash was about a half pound so it might take longer if it bigger.

I put the squash in my food processor to blend and cool.


I added 1 drop of Nutmeg Essential Oil,

1 drop of Cinnamon Bark,

then salt and pepper to taste.

Now for the pasta!

This is what I used. You can buy this at most local stores.


I followed the directions, but since I don’t have a pasta maker, I rolled it out.

The dough kept shrinking! Boy did my arms get a workout! Keep rolling it until you are happy with the thinness or thickness you like. sidenote: maybe I need an attachment for my Kitchen Aid!!!

So then I took my little 3″ cookie cutter and made enough pieces for me to fill with the butternut squash mixture. Use 2 pieces of your dough and press them together with the filling inside. Seal them with a fork on the edges, then brush on the egg wash.

While I was waiting for the 3 quarts of salted water to boil, I started on my sage butter sauce.

In a large saute pan, melt 8 tablespoons of butter. ( 1 stick of unsalted butter)

Add the fresh sage to the butter and continue to cook it until brown. Don’t let it burn!

I did not have enough fresh sage so I used my Young Living sage essential oil. I put 3 drops in my butter sauce after it had browned.

I placed my ravioli  in the boiling salted water. When they start to float, I placed them on my platter. Then pour the sage butter sauce over them! It smells like heaven! I think it is about time to eat!

Here is mine! It turned out awesome, so sweet and savory!

NingXia Red Popsicles With Laina

I love it when my little love bug comes over and she is ready to be in my kitchen.

Today she made NingXia Red popsicles  all by herself . Here is the recipe :

•  1/2 Cup water

•  1 cup NingXia Red

• 2 drops Orange Vitality essential oil

Directions :

Combine all ingredients and divide equally between ice pop molds, leaving about 1/4 inch at the top for expansion. Put lid on and place sticks into molds. Freeze over night or until frozen. To free the ice pops from their molds, dip the frozen molds in a bowl of warm water until the ice pops loosen then enjoy!

Wolfberry Coleslaw And Turkey Burgers

After working in  my garden I wanted something lite and healthy for dinner.I went to my new Healthy Cooking Body Mind And Soul  cookbook and put these together. Yum!!!

Quick and easy and full of flavor.My husband, son, and grand daughter  loved it. I replaced the sun flower seeds with walnuts  In the Wolfberry Coleslaw I had those on hand .With any recipe you can make it your own. Here are a few pictures of my dinner!

Love all the colors!!! Oh and it was my first time to try Jicama. Reminded me of a potato !

Cannellini Hummus With Black Pepper And Lemon Essential Oils

If you haven’t tried Cannellini hummus your in for a treat.
I made mine in just a few minutes,here is my recipe

1 can of Cannellini beans
Drained a rinsed
2 cloves of garlic
Few pinches of salt
2 to 5 drops of
3 drops of
Mix in a food processor until creamy,add 1/3 cup of Olive Oil  while machine is on
Place in a bowl and add little more Olive Oil on top!!
Dip and enjoy with your favorite chips,crackers, or bread!

Dark Chocolate Gingerbread Truffles

I love the holidays! Try something little different to share with family and friends.

Essential Oil – Infused Dark Chocolate Gingerbread Truffles

Here is the recipe I used:




• 6 oz. dark chocolate ( at least 50% percent cacao ), finely chopped

I used Ghirardelli  60% cacao.

• 1 tablespoon coconut oil

• 1 tablespoon Yacon Syrup

I used agave

• 1/3 cup coconut milk

• pinch of sea salt

• 2 drops Cinnamon Bark

• 2 drops Ginger

• 1 drop Clove

• 1  drop Nutmeg

• Unsweetened cocoa powder for rolling


  1. Place the chopped chocolate in a heat – proof bowl and set aside

2.  Combine the coconut oil, Yacon Syrup, coconut milk , and salt in a small sauceoan and bring to a simmer ( do not boil )

3. Pour mixture over reserved chopped chocolate. Let stand for 1-2 minutes,and the stir gently until completely melted and smooth ( I use a whisk )

4. Stir in essential oils

5. Refrigerate until mixture is just set,about 2 hours

6. With a small scoop or spoon , make 12 balls, rolling each between the palms of your hands to smooth.

7. Place about 1/4 cup cocoa powder in the bottom of a shallow plate or dish.Roll each truffle in cocoa until coated

8. Refrigerate for at least 15 minutes to firm and serve

9. Truffles can be refrigerated in an airtight container up to two weeks; let stand at room temperature 10 minutes before serving

DIY Salt Scrubs Using Young Living Essential Oils

It is easy and fun to make your own skin care products. Tired of rough feet? How about rough skin on your body? These scrubs can be customized to fit your needs. you can make it whatever scent you desire. Now if was as easy to get someone to apply these to you… maybe a little massage in the process. I get my husband to help me sometimes when he can( I’ve trained him pretty well)

Don’t you love getting handmade gifts from your loved ones? They feel special like they were made with you in mind

With the holidays sneaking up,why not make your family and friends a special gift made by you.

Body or Foot Scrub Recipe :  All you need is Epsom salt , essential oils ( I use Young Living ) and carrier oil of your choice. In my recipes I used Grape seed oil. Jojoba oil , almond oil , and even olive oil are great to use. If you don’t have salts on hand you can also make these with sugar!

• 1 cup of Epsom Salt

• 1/3 cup of Grape Seed oil , ( that’s I what had on hand )

• 10 to 15 drops of  essential oil  ( I used Rosemary and Peppermint)

• Mix it all together and put in a air tight container

I put mine in little mason jars and dress them up, which I love to do.

• Bath Salts Recipe

• 1 cup of Epsom Salt

• 1/2 cup Baking Soda

• 10 to 15 drops of essential oil ( I like to make mine for relaxing , so I used Stress Away,Lavender,Valor )

Mix it up and there you go! See how easy that was.
