Pumpkin Chocolate Chip Energy Balls

I saw this recipe on Pinterest and other social media. I wanted to get in on   I will be adding my Young Living Essential oils and Organic NingXia Wolfberries.

With the hustle and bustle of shopping and running around I thought this would a great snack to grab before you meet the world

Here is the recipe I used, but put my twist on it

• 3 cups uncooked oats

• 1 cup of pumpkin puree

• 1 cup of natural peanut butter ( you can use almond peanut butter)

• 4 drops of Vitality Cinnamon Bark

• 2 drops of Vitality Clove

• 2 drops of Vitality Nutmeg

• 1/2 teaspoon of vanilla

• 3 tablespoons of Flax seeds (if the mixture is too wet add another tablespoon of flax seed ) Make sure its not sticky

• 2 tablespoons of dried organic NingXia Wolfberries

I chopped them into small pieces

• 1/2 cup Cocao Sweet Nibs ( you can use mini dark chocolate chips )

Roll them in about inch ball on parchment paper place in the freezer for 1 hour. Put them in an airtight container and refrigerated up to a week

you can also add chopped walnuts, almonds, toasted coconut flakes anything you want. There is no cooking! Have fun!

Maine Blueberry Cobbler!

Being from the south ,we can be some cobbler making fools! I saw this recipe in my Young Living cookbook and I wanted to share it with you. “From Our fields to Your Table” I am loving this new cookbook!!

Here is the recipe :


• 3 cups blueberries ( fresh or frozen)

• 2 tbs. arrowroot

• 1/4 cup boiling water

• 1/2 cup Young Living Blue Agave (

• 2 drops Lemon Vitality essential oil (


• 3/4 cup Gary’s True Grit Einkorn Flour or Gary’s True Grit Gluten-Free Pancake and Waffle Mix ( ) (

• 1 tsp.baking powder

pinch of salt

• 1/3 cup milk (plant base or dairy)

• 1 tbs. almond oil ( i used olive oil )

• 3 drops Cinnamon Bark Vitality essential oil,as desired ( )


Lightly oil the bottom and sides of a 3- or 4- quart slow cooker. Add blueberries and arrowroot powder. Stir to coat the berries.

Combine boiling water, 1/4 cup Blue Agave,and Lemon Vitality. Pour over the blueberry mixture and stir. Turn slow cooker on high while assembling the cobbler.

In a small mixing bowl, combine flour,baking powder,and salt. In a glass measuring cup, add remaining Blue Agave, milk,oil, and Cinnamon Bark Vitality and stir. Add to the flour mixture and let sit for 5 minutes.

Spoon over the blueberries and spread to cover, but don’t seal to the edge.

Cover the slow cooker and cook for 1 1/2 hours.Remove the lid, turn the slow cooker off, and let cool for 15 minutes before serving. Top will appear moist but continue to after the cover had been removed and the heat turned off.

Makes 4 servings

It was a sweet tasty treat! Homemade Vanilla Bluebell ice cream topped it off!!! Yummy!!

Chocolate Peanut Butter Cinnamon Protein Bombs!

These are great to have on the run or a quick healthy snack. Easy to to put together!


The only thing I changed was the peanut butter. I used Almond Butter

Sweet Potato Brownies!

Yes I said sweet potato brownies! At first I was like sweet potato’s? In my brownies? Well let me tell you.They are wonderful.I made them little different.

Here is the recipe I used.I did some changes.

• 1 cup wholes wheat flour

• 1/3 cup dark cocoa powder ( I used my regular cocoa powder )

• 1 teaspoon cinnamon ( I used my Young Living Vitality Cinnamon Bark,2 drops )

• 1 teaspoon baking powder

• 1/4 teaspoon salt

• 2 eggs

• 1 cup of honey

ok this where I changed another ingredient

I did not have any honey ,so I replaced it with  a cup of coconut sugar and added 1/4 water to it and stirred it up.

• 1 teaspoon of vanilla

• 2 cups of mashed sweet potato


I boiled my 2 medium sweet potato’s until they were tender.

If you want to bake them in the oven ,bake at 400 degrees for about 60 minutes.

Let them cool completely. Set aside

Heat the oven at 350 degrees. Lightly grease an 8-in pan with non stick spray

In a large bowl, whisk together the flour , cocoa, baking powder and salt.

In a separate bowl,whisk together the eggs and then the honey (or the coconut sugar I made) and vanilla. Add wet ingredients to the dry ingredients and stir until just combined.Stir in sweet potato’s. In my  brownies I need more chocolate,so I added a cup of dark chocolate chips to the mix!

Pour the batter into your prepared baking dish.Bake for 30 mins. I checked on mine and decided to take them out at 25 mins.
